In the most amazing location and decorated in a sang-froid European style right on the white sandy beach next to Playa Palms is Indigo Beach restaurant.
With a few minutes in my hands and a camera I arrived unannounced in the morning to see if they would share a Mexican recipe for breakfast. This time we spoke to Cesar Augusto, cook from Indigo beach, who spontaneously demonstrated how to make “Enchiladas de huevo con chaya y tocino”. Recipe: Lightly fry corns tortillas and put them on a plate. Make normal scrambled eggs with small pieces of bacon and spinach. Fill the tortillas with these eggs and cover them with a tasty tomato sauce that you like, add a touch of cream, shredded cheese and three slices of onion and breakfast is served! I ended up eating those enchiladas on the house, they were exquisite. A well prepared tomato sauce is key, so learn how to prepare one for this dish. ¡Buen provecho!
