NIBS was opened in the ground level of Hotel Cacao, located on Fifth Avenue, between Calles 30 and 32. The setting is gorgeous so, in addition to a memorable meal, guests will be able to feast their eyes on the beautiful interior of the hotel, complete with a full wall-sized mural in the dining room.
The mural was painted by renowned Mexican artist, Eduardo Kobra, and is an homage to the Douanier Rousseau. It combines elements of two paintings by the French post-Impressionist, Hungry Lion Throws Itself on the Antelope and The Dream. Once you’ve feasted your eyes on the surroundings, you’ll be eager to sit down and peruse the exquisite menu created by Chef Alejandro Cuatepotzo.
Chef Cuatepotzo trained under big-name chef Enrique Olvera, who has opened some of Latin America’s highest rated restaurants. Even the restaurant’s dishware is noteworthy, the bulk of which were purchased from the famous Cerámica Suro studio in Jalisco. Once seated, you’ll have a difficult time choosing from the wide range of moderately-priced, upscale dishes.
Cuatepotzo is a genius at putting his own signature and gourmet twists on traditional Mexican and Mayan cuisine, resulting in highly-praised menu items such as lobster with a green mango salsa, ceviche with a coconut lime marinade, and conch fritters, all of which have yielded the restaurant’s superb ratings.
