One of our favorite dining spots is Plank.

While the food at Plank is upscale, the cooking methods stretch back to the time of the ancient Mayans who once made Playa del Carmen their home. During this time, freshly caught fish were cooked on soaked wooden planks over an open fire, yielding moist, tender, and succulent meat with a mild smoky flavor. While modern grilling and smoking techniques have evolved over the centuries, Plank has opted to return to ancient cooking methods using both wood and Himalayan salt planks.
Depending on the dish, the food is cooked on either Cedar, Alder, Maple, Hickory or Oak planks from old wine and Tequila barrels. The chefs at Plank also use Himalayan salt planks, which infuse a subtle salty flavor along with all of the healthy minerals that have been stripped from industrialized salts. Some of Plank’s favorite menu items include:
- Beef Wellington, Plank Style (their signature dish)
- Traditional Cedar Plank Salmon with a Homemade Rub
- Himalayan Grilled Jumbo Shrimp with Chipotle Chutney
